The wine was cultivated on Santorini for centuries. The first mentions of Santorini wine were found in notes of the Phoenician merchants, long before the legendary eruption which created the island as we know it now.

 Today about 40 local grape varieties grow on Santorini. The volcanic soil and unique microclimate of the island create a wine with pleasant mineral elements, acidity, and an explosive body, matching the volcanic character of the island.

The most popular grapes used for white wines are Assyrtiko, Aidani, and Athiri. Wines are generally fresh, acidic, with a hint of salinity, and not shy with alcohol.

Mavrotragano and Mandilaria are grapes typically used for red wines. Frequently aged in oak barrels these wines have deep and rich flavors with cinnamon and licorice notes.

Famous Vinsanto wines of Santorini are made from the late harvest, sun-dried white grapes, and aged in oak barrels for at least two years. One can find notes of rum, sultanas, plum, and menthol in these reach and unique wines.
